Great Southern Lunch

Had a great lunch today at B McNeils on the square. If you havent tried it,they have one of the best meat and three lunches around!! Todays choices were pot roast, salmon patty, country fried steak and chicken tenders. I had the salmon and it was yummy. Lots of flaky salmon, little breading to hold it together. The squash casserole is different. If has yellow, zucchini and tomatoes, not a lot of cheese but loads of flavor. Their seven layer salad is fabulous. It was a littel heavy on the mayo today but after I scraped that off it was yummy. I also had lima beans. It is a lot of food for the money ( $8.25 includes meat, 3 sides, a biscuit and tea or coffee) If you are not in the mood for meat and 3 they also have salads, sandwiches and soup (try the crab bisque). The plate lunches are only served at lunch and there are always plenty of sides, maybe 20, and lots of desserts if you have room. Plus, you are supporting a local business.The servers are friendly and helpful. And the location is great, it is an old house converted to a restaurant. Very quaint.

Turkey, wild rice and Portabella soup-
Last week the local Kroger had turkey breast on sale for 50 cents per lb. A great deal!! I had never cooked a turkey or turkey breast before so this was a challenge to me. Turned out to be really easy. I sliced at intervals in to the turkey and inserted pats of butter. Then I sprinkled with salt, pepper, garlic and all purpose seasoning. While it was baking..., I basted it with a mix of water and white wine ( just about cup of wine, not alot). So The first night I had turkey with wild rice and peas. Then I had Turkey sandwiches. On the 3rd day I removed all the meat from the bone that I could and saved some in the fridge and froze the rest for later. I looked at the turkey and realized there was a lot of white meat on the bone still, so I decided to boil it and make broth to freeze. I took about 4 cups of broth, 1 carrot sliced thin, 5 portabella mushrooms chopped, 1/2 cup onion.1 stalk celery, sliced thin and about 1 cup of chopped turkey and boiled it until the veggies were tender. Then I added 1 1/2 cups of leftover rice, 1/2 cup leftover peas , salt and garlic to taste and had delicious soup for dinner.No preservatives since it didnt come from a can. And I enjoyed a glass of my favorite cheapo wine. Winking Owl Sauvignon Blanc ($3.47 a bottle at Aldi-not in Tennessee- I brought it back from Virginia) . Great inexpensive dinner since I used 39 cents carrots and celery, and 69 cent mushrooms and onions from Aldi. The above measurements made 3-4 good size bowls. More if served with salad and bread. Soup is one of my favorite things to make and eat, any time of year.See More

    New Domino's Artisan Pizza Review

    Used my free artisan pizza coupon tonight to try the Chicken Carbonara Pizza at Dominos. Decided to try that since I had already had the Italian pepper a few months ago. I went to the one on Baird Lane. They are so nice there. I was going that way to go to Publix and get creamer and a movie from Blockbuster Express (free also), The mix of tomato and alfredo sauce was yummy, I didnt care much for the chicken. It tasted like those refrigerated chicken strips which I cant stand. But the tomatoes were fresh and juicy. The crust was flavorful and not as salty as on the spinach one. All in all very good. Everyone should try it.

    A new take on an Easter Favorite


    In honor of Easter and 69 cent per dozen eggs from Aldi, I made Deviled eggs this weekend. Since I am known for putting my own twist on all recipes, I have a few secret ingredients I will share :)

    6 eggs, hard boiled,cooled and peeled
    1/2 cup mayo, light or fat free is better.
    2 tbsp brown mustard
    1/4 cup fine chopped reed onions
    2 tbsp sugar free pickle relish.
    2 tbsp real bacon bits (or crumbled bacon)

    Slice eggs lengthwise and remove cooked yolks to separate bowl.Mix yolks with remaining ingredients.Take yolk mixture and fill egg halves. Top with crumbled bacon and sliced green onions if desired (trust me its good)
