Ceviche

After dining at Bonefish Grill this weekend, I decided to try and find a recipe of my own. This is delicious. Ginger can be left out, it just cuts the tartness of the juice. This is absolutely delicious. Serves 4 4 ounces tilapia (or white fish of choice) 4 ounces shrimp 4 ounces small bay scallops Juice from 7 limes 1 cup lemon juice 1 cup orange juice 1/2 seedless cucumber finely diced ( English Cucumbers work best) 1 tablespoon minced garlic 2 tablespoons jalapenos diced (FRESH NOT CANNED 1 tsp ground ginger 2 tablespoons chopped cilantro 2 avocados, cut intocubes 2 tbsp. finely diced red onion 2 tbsp. finely diced red bell pepper to taste sea salt to taste cracked black pepper Combine ingredients, cover and refrigerate 2 hours. Serve alone or with tortillas for dipping. NOTES: Ceviche is marinated in a citrus juice.The citric acid actually causes the seafood to cook without heat.

Crab Cakes w/cabbage kale salad

Ingredients: •1 pound backfin Blue crab meat or other lump crab meat •1 egg beaten •2 tbsp mayonnaise •1/4 cup finely chopped celery •1 tbsp. diced pimentos •1/2 tsp Old Bay seasoning •1/4 c finely chopped onion •2 tbsp vegetable oil Preparation: 1.Carefully check the crab meat for any cartilage. Put meat in a bowl and set it aside. 2.Beat egg and mix with all the other ingredients except crab. Add crab but Only mix enough to combine ingredients. You want crab to be in chunks, not finely mixed. Shape into 6 crab cakes, and refrigerate for at least 1 hour. 3.Heat about 2 tablespoons of vegetable oil in a non-stick frying pan. Sauté until golden brown on each side. This will only take about 3-5 minutes per side. Cabbage and Kale salad 1/2 head green cabbage, finely diced 3 cups fresh kale chopped in small pieces 1/2 c. chopped red pepper 1 bunch parsley, chopped fine Mix all ingredients above in large bowl. Dressing 1/2 cup mayo 2 tbsp. lemon juice 1 tsp old bay seasoning 2 tbsp. juice from the jarred pimientos used in crab cakes- can actually add pimientos if you want it spicier.

"The List" 2014

Below is my “list” for 2014. What’s the list? Well it’s my combination of New Year’s Resolutions and A Bucket List. I have changed it a little bit this year. Last year had too many things I needed someone’s help to complete (I wasn’t going on a cruise alone!)They teach us in RE classes that when setting goals they should be measurable and attainable. I could make the usual resolutions (lose weight, save money etc ) but who doesn’t want those things. I could go for the high stakes- create world peace, fall in love! I want those things but they are both in God’s hands and out of my control. This list has more attainable goals of things I want to do but haven’t got around to until this year. There are a few things I didn’t get done in 2013 that I have moved to 2014. It contains projects I plan to do as well as business and personal goals. I started the list as a project for my 40th birthday and have continued it since. I started the doing of “REAL” things several years ago after a friends health scare made me reevaluate my own life. We’ve all seen the movie and know the premise of a bucket list. I believe that you shouldn’t wait to do the things you want. If you decide to start living only when you know you are dying, you are wasting not only the time you have left but also the time you have been given …..So follow me as I complete the list and write about it. 1. PIN less- DO MORE 2. Make a difference in the life of a complete stranger 3. Have my picture made at top of Empire State Building 4. Learn to make a perfect pancake 5. Get me PMN designation 6. Visit 10 Tennessee Wineries on my list 7. Donate 20 filled stockings to Charity 8. Visit 52 new places ( restaurants, cities, etc- Avg 1per week) 9. Personally Donate 1000 items to the Food Bank ( that’s only 83 per month) 10. Hike 5 new parks in Tennessee 11. Increase my Business Production by 40% 12. Get my CRS Designation 13. Learn to cook scallops 14. Add 100 new “REAL” contacts to my database 15. Eat Less Processed foods 16. Convert Garage to an office 17. READ MORE 18. Start up Tuesday movie days again 19. Increase my RPAC contribution 20. Pay mortgage down to ½ 21. Give up Diet Coke 22. Workout at least 30 minutes a day 23. Be more selfish ( that sounds bad but it something I need to do ) 24. Entertain more 25. READ THE DANG WARREN BUFFETT BOOK! (been on the list 3 years) 26. Visit the Holocaust museum in DC 27. Buy and wear a pair of red stillettos ( haven’t found any in 2 years that fit!) 28. Go to the Country Music Hall of Fame 29. Take a foreign language class- French and Italian are options 30. Go to Paris TN 31. Get my carry permit 32. Use my passport before it expires 33. See the sunset from Clingmans Dome 34. Sleep under the stars 35. Spend an entire day doing absolutely nothing but reading or watching movies 36. Throw a dart at a Tennessee Map and go there for a day 37. Sip wine next to a campfire 38. Work on tracing my family history 39. Go on a getaway “Kelly” Night 40. Learn to accept a compliment 41. Host a Christmas Cookie Exchange 42. See every movie that’s ever won Best Picture 43. Spend an entire day at beach without my phone.
